Seasoned Halibut, Bulgur Pilaf and Arugula Salad

Prep: [15 minutes] Cook: [20 minutes] Ingredients: 1LB halibut, boneless skinless, cut into 5oz portions 2 tsp paprika 1 cup of uncooked whole wheat Bulgar or other complex carbohydrate 2 cups water ½ small onion 1 clove garlic crushed and chopped 1 tsp saffron or saffron petals/*turmeric may be substituted if saffron is not available 2 Tbs dried currents or pine nuts or both* ¼ lb of arugula washed and dried 4 Tbs of EVOO plus one Tbs EVOO [extra virgin olive oli, EVOO] 1 lemon halved and juiced, divided 1 cucumber - optional, washed, partially peeled and sliced Salt and pepper to taste, I like white pepper on my arugula and halibut too Mix: Preheat oven to 375 degrees. In a quart size sauce pan add a dash of the oil on med/high heat. Add onion first then garlic and then Bulgar and stir for two minutes over heat before adding water. Add the water, saffron and currents and pine nuts if using, and cover. Bring pot to a boil. Turn heat down to very low and simmer for twenty minutes cover

Otolith's Salmon Cakes

Here is a recipe we enjoy using the canned salmon we love so much. We hope you'll love it too! Otolith's Salmon Cakes Ingredients : 1 Can 7.5. oz. Sockeye Salmon w/juices 1/2 small Yellow Onion or Scallions - fine dice 1/2 small Bell Pepper - fine dice, any variety 2 Tbs. small chopped Flat Leaf Parsley or Dill* 1 Egg Juice of half a Lemon 1 cup Panko or other bread crumbs (you can use more if you are so inclined)** 2 Tbs. Olive Oil or Grape Seed Oil for frying Mix together all ingredients except breadcrumbs and oil. Form mixture into 4 patties of equal weight and size. Preheat skillet to MEDIUM heat and add oil. Coat each salmon cake with breadcrumbs and sear to cook on both sides in hot skillet with oil until golden and egg is fully cooked. Avoid over handling while cooking in order to maintain shape, approximately 6 minutes per side. Reduce heat to low if your patties or the oil begins to smoke while cooking. Serve with fresh spring vegetables and garnish

Recipe: How to Eat Halibut for Breakfast - a simple delicacy for left-over cooked halibut

Makes spread /dip for 2-3 large slices of hearty bread Ingredients: 4oz left-over cooked boneless/skinless halibut - mashed with a fork 2tsp real mayonnaise 1tsp finely diced pickle or relish 1/2tsp spicy mustard 1/2tsp fresh lemon juice 1/8 tsp Hungarian or smoked paprika [optional] 1/8 tsp of cayenne pepper [optional] 1/8 tsp cumin [optional] salt and pepper to taste Serving Suggestion: Winter/Fall - serve Breakfast Halibut open-faced sandwiches using thick slices of multi grain bread with a side of pear or apple Spring/Summer - serve Breakfast Halibut open-faced sandwiches on Tuscan toast points topped with thinly sliced edible lemon round [cut lemon using mandolin for paper thin edible slices] and garnish with fresh dill and a side of seasonal berries Mix: Combine all above ingredients until everything is incorporated and chill until ready to serve.
