For a Delicious Halibut, Add the Fat!

We hope you enjoyed your Memorial Day Holiday and like us are gearing up for the Summer Season! We want you to know that Halibut, Rockfish and Sablefish are in! You can pick up any of those fish at our farmers’ markets, order directly from Otolith or find our fish at numerous retail locations throughout the Delaware Valley!

Here is a tip from our owner Amanda for cooking lean white fish such as Otolith's seasonal, sustainable May 2013 harvested Halibut: 

Add some beneficial fat to halibut while cooking. Any healthful fat such as sesame oil, olive oil or grape seed oil will all enhance the goodness of halibut and will add balance to its delicate flavor as an additional ingredient to compliment fish as served along side or as an accompaniment.

Several ways one can add healthful fats to one's halibut recipe include - 

  • As a dressing to be served over a warm, cooked fillet (ex. puree herbs, oil, garlic and lemon juice, then pour over the cooked fillet).
  • As a primer before grilling or baking. Coat halibut chunks or slices in seasoned oil using garlic or ginger, then bake or grill or sear. 
  • As an additional ingredient. Either marinate halibut with oil or serve alongside as an accompaniment to baked, grilled or seared fish. For example, dice fresh avacado, fresh tomato, onions and cilantro - toss with oils and lime, salt and pepper. Serve over top or off to the side.
